Case Study: Rustic Elegance and Technical Precision at Goosedale

At Celebrity Cakes, every commission is a balance of aesthetic vision and technical execution. For Janna and Paulius’s intimate garden wedding at Goosedale in Papplewick, the brief was for a "perfectly imperfect" rustic finish—a three-tier toffee and toasted pecan sponge that looked as natural as its surroundings.


The Technical Challenge: Safety & Integrity

Designing a rustic cake often requires more precision than a smooth finish. A specific request was to use a raffia-style ribbon; however, because natural raffia is not food-safe, I adapted the design by glazing the reverse of some double faced satin with a waterproof barrier to protect the cake's integrity. This clinical approach extended to the floral decor. To ensure absolute food safety, in addition to making the stems food safe, every fresh flower and leaf was individually glazed and shielded with food-safe cellophane before being positioned.


The Signature Service: Protecting the Vision

Luxury service doesn't end when the cake is baked; it continues through to the final presentation. Upon arrival at the venue, I noticed the setup didn't align with the couple's vision. I worked with the venue team to swap the table to a glass finish that better suited the aesthetic, personally polishing it to a high shine before re-setting the cake. To complete the look, I dressed the cake knife with fresh florals and hand-scattered rose petals to ensure the entire display was flawless.


Inside the Design:

  • The Flavour: Toffee sponge layered with homemade caramel, toasted pecans, and our signature Madagascan vanilla buttercream.

  • The Finish: Hand-textured buttercream "swathes" in a custom-blended shade, topped with a delicate ruffle rosette.
