For years, my kitchen has been a laboratory. I have tested, tasted, and tweaked countless blends to prove one thing: Gluten-free baking shouldn’t just be "good for gluten-free"—it should be extraordinary. I am incredibly proud of the cakes I create for you, but I have always had a bigger vision. I don’t just want to bake for you; I want to bake with you. That is why I am thrilled to officially introduce:

Whether you are a complete beginner terrified of dry or sunken sponges, or a seasoned baker looking to master complex patisserie, the Academy is designed to give you the skills, the science, and the confidence to bake without compromise.

1. The Studio Experience (In-Person)

Nothing beats the smell of baking in a real kitchen.

My intimate, in-person workshops take place right here at my studio in Mansfield. These classes are designed to be hands-on and immersive. We strip away the mystery of xanthan gum, guar gum, psyllium husk, and rice flour, teaching you the fundamental techniques that turn "average" bakes into showstoppers.

I know that not everyone can make the trip to the studio. That is why I am currently developing a suite of digital products and online courses.

Using the latest technology, I am building a library of resources that will allow you to learn at your own pace, from anywhere in the world. My online Academy will bring my expertise directly to your tablet or phone.

3. For the Next Generation: Meet Toby

The Academy isn't just for adults. I believe that food confidence starts young.

I am delighted to share that we are working on a special project featuring Toby the Gluten-Free Squirrel™. Toby will be the face of our junior resources, starring in a dedicated storybook designed to help children navigate dietary requirements with fun, positivity, and delicious recipes.
